This is sort of what SImple English is for.

Not exactly. Simple English is a simple language, but not necessarily simple content.

Wikipedia for kids

What do you think about a Wikipedia especially for kids, where the content is reduced to a minimum which would be perfect for kids. They would have the possibility to get informations about sth. they really want to know and they can get the informations in a size perfect for their "level". Everyone knows that the students/kids do researches on the internet already in 2nd grade, so it would be perfect for them when they use a "smaller" version of Wikipedia.

Why only for kids?

I would suggest to split the article in sections which are marked with a number from 1 to 10 that indicates how easy they are to read. Maybe you could then select the maximum of complicity for yourself, so that the topics which are too comlicated automatically get hidden. (technical detail: I would propose to store it in a session cookie for users that aren't logged in and for people that are logged in as user-specific setting.)
